Homemade Ceviche


CLC student Rosa graciously taught the students how to make ceviche.  They followed an authentic Peruvian recipe that her family uses.  In fact, even her sons Geordan and Julio, who are also CLC students, were there to help out and guide the rest in making what turned out to be a fabulous meal.

The fascinating thing about this delectable meal is that it can be prepared in such a short period of time.  Everyone helped out by squeezing the lime and lemon juice and chopping the ingredients, which included the fish, red onions, hot red peppers, ginger, celery and cilantro.  It only took 30 minutes for the fish to cure! 

The ceviche was served with sweet corn, a crispy lettuce leaf and a slice of soft yam/sweet potato.  Tada!
