“Emergency” kimchi


Kimchi is probably Korea’s most famous food.  It consists of fermented cabbage and a lot of red chilli pepper powder, onion, garlic, and other flavourful ingredients.  What many people don’t know is that you can make “emergency” kimchi without fermenting it.  CLC students learned that by soaking the cabbage in coarse salt water for at least 4 hours before adding all the other ingredients, you can skip the fermentation process, yet re-create the same delicious taste!
